Spanish Picadillo with Turkey (4-6 servings)
Ingredients:
3 packs of Skinny Pasta Couscous
1 tsp olive oil
1 large onion chopped
1 tsp kosher salt
¼ tsp pepper
½ kg of lean ground turkey
1 Tbsp minced garlic
2 tsp cumin
1 ½ tsp dried oregano
1 ¼ cups tomato sauce
½ cup chopped olives
⅓ cup chopped raisins
Cilantro and hot sauce for garnish
Directions:
Rinse the Skinny Pasta under warm water and drain.
Heat olive oil in a large nonstick skillet over medium-high heat. Cook onion, salt, and pepper for 5 minutes, stirring frequently, until onion is soft. Add the turkey and cook, breaking up with a spoon, until well browned. Add garlic, cumin, and oregano and stir to combine. Add tomato sauce, olives, raisins and the Skinny Pasta and cook for 2-3 minutes. Served garnished with cilantro and ho
